Glycyrrhiza uralensis Fisch. ex DC., commonly called Chinese liquorice, is a flowering plant native to Asia. It is used both as a sweetener and in traditional Chinese medicine. Its root, known as radix glycyrrhizae or gancao (Chinese: 甘草, pinyin: gāncǎo; romanized kan-tsao), is counted among the 50 fundamental herbs of traditional Chinese medicine. In this system of medicine, it is used to harmonize other herbs and lessen the harsh effects of other herbal ingredients. The root is typically harvested in spring and autumn, then sliced and sun-dried. It may be used unprepared, or stir-baked with honey before use. The main production regions for this liquorice root in China are Shanxi, Gansu, and Xinjiang.
