Eremurus spectabilis M.Bieb. is a perennial herbaceous plant belonging to the genus Eremurus. When its fresh young leaves emerge from the soil as buds in March and April, they are collected and eaten as a vegetable. This species is native to Iran, Iraq, the Lebanon-Syria area, the North Caucasus, the Palestine region, southern European Russia, the Transcaucasus, Turkey, Turkmenistan, and Ukraine. In the Eastern Anatolia Region of Turkey, this plant is commonly consumed as food.
